I am home now almost 24 hours after a passing nightmare. Adam has been sick since October 13 and while the initial ailment resolved fairly quickly, a secondary one set in. We went from "check in in the morning if he is still running a fever" to "I have to send you to the ER at the hospital."

Losing Solomon was the hardest thing I ever had to go through. But lying in the hospital chair-bed, next to Adams silently dripping IV, I realized it could not have been. Solomons loss was losing a dream, but the reality that I was here with a sick kid was a living nightmare. The panic took root in my bones, and while we are out of the woods now, my body has not relaxed.

Luckily, whatever was ailing Adam has seemed to pass. He has been fever-free for 72 hours. He is so drugged up for a broad range of possible illness that I know all the bad germs are almost gone. He is eating his restricted diet and will return to school Monday [god willing] on restricted activities.

But he is fine, and he is home.

Yesterday was Rebeccas communion. It was really great to share the day with my best friend and her family. I looked at a photo album from Rebeccas baptism and saw Solomons mom. Rebecca and Solomon were supposed to be born within days of each other. Rebecca and Solomon were supposed to be friends.

In the photo album is the "after" Amy - the one who lost Solomon. I am smiling because I am so thrilled for my friend. I am smiling because I am pregnant AGAIN. That baby wouldnt arrive either, but I didnt know that then.

I still have the outfit I wore to Rebeccas baptism and toyed with wearing it yesterday. How ironic that would have been if I did.

Im FINALLY in a really good groove with my meals.  Now that Ive learned that I can actually season my food, Im so much happier with the taste!  I (sorta) joked with my trainer/nutritionist that he could have mentioned that about 7 weeks ago!!  I eat the same thing over and over, but since I like it, I dont mind.  I still struggle with my last meal of the day (a protein shake or egg whites with side salad) because at that time of night (about 8pm) I just want a bowl of cereal.  I have caved and had cheerios several times. 

Protein Pancake:  My breakfast is a protein pancake that I eat around 7:30 a.m.  I top it with Molly McButter (butter flakes, also known as manna from Heaven after you havent tasted butter for so long) and all natural fruit spread (both trainer approved).  My pancake is kind of like dense bread with butter and jelly.  I actually love it now.  I eat it like pizza.


I make my protein pancake with 1/2 cup of ground oats (I buy whole old fashioned oats and grind them in the food processor) with 3/4 cup of All Whites and a splash of water- less than 1/4 cup.  I used to make it with cinnamon and flax seed, but lately, have just been doing the 3 ingredients above.  I make one big pancake in a small skillet.  You flip it when its just about solid on top.


After the pancake is cooked (Ill touch it to feel that it is firm), I cut it into 4 pieces let it cool on the stove top (or a wire rack) because I found that if I put it directly onto the plate, it was still steaming and got soggy.  


Meals 2, 3, and 4 are 5 oz of fish (mahi mahi), 4 oz of potato, and 1 cup of veggies (green beans or broccoli).  I eat this at about 11:30 a.m.; 3:00 p.m.; and 6:00 p.m.


FISH:  I buy individually wrapped fish fillets and defrost them in the fridge or in a bowl of hot water.  In the bowl of water, they only take about 5 minutes to defrost.  Then, I pat dry, sprinkle with Mrs. Dash and garlic powder and cook on the stove top on medium high heat for about 7 minutes.  Im careful not to overcook it, and take it off the heat when its just about cooked through so its still moist and juicy inside.  This fish is really good and has a mild flavor.  


POTATOES:  I wash and prick with a knife, then microwave for 4-5 minutes.  Then I chop them up and toast them up in a skillet.  After they are browned, I season with Molly McButter.


VEGGIES:  I buy big bags of frozen veggies, measure 1 cup onto a plate and microwave for 3 minutes.  Then, season with Molly McButter.

SALAD:  I can also have salad (no iceberg lettuce) so I use romaine and spinach, with fat free dressing.



PROTEIN SHAKE:  My last meal (around 8:00 p.m.) is usually a protein shake with one scoop of protein and 6 oz of water. 

Until my trainer/nutritionist modifies my meal plan, this is what Im eating.  Every day, all day.  My husband said hell do this last month with me (but hell do chicken and lean red meat instead of fish).  Hes seen me lean up and wants to lose some weight too.

I went for my bikini consult to order my suit and Ill share that with you next, just off to the gym now and wanted to post my latest progress update. Although things are coming together, and if I hadnt committed to this contest, Id be very satisfied with where I am now, but I still have lots more work to  do to get "competition ready."  

My body fat is 19% right now, but it only came down from 19.75 in the last two weeks.  We are looking for it to come down at least one point a week, so my trainer was saying he needed to adjust my diet. I had to confess the Cheerios I was eating at night.  He explained that ideally I would lose another 8 pounds before the contest, so every calorie counts and eating carbs right before bed is not a good idea. In fact, he prohibited any carbs after 6 PM from now on. I promised no more Cheerios, and I would instead be drinking my protein shake like I was supposed to.  Ive been doing that the last couple days and I am hungry at night, so Ive been going to bed earlier. This is actually a good thing because then I wake up more energized in the morning. Eating my meals consistently throughout the day prevents me from getting any midday slump.   

I also admitted to my trainer that I have not been able to give up my coffee creamer. He tried to persuade me against using it but said I could keep using it as long as I only used 1 tablespoon. Its a deal!

I really dont know if I can lose 8 pounds in six weeks,  but I am uping the intensity of my cardio now. Im making sure to get in five, 45 minute sessions at a more intense rate.  Im typically on the treadmill and do 15 incline at 2.5-3.0 intervals. This should help me burn more calories. I also measure everything I eat so I know Im getting precisely the exact amount. I realized one fish filet per meal is not enough, it needs to be one and a half to equal 5 ounces cooked. 

I share all these details with you to let you know exactly what it takes to do something like this and also to chronicle my journey. I really appreciate you following along and your supportive comments. Thank you. 

One of the things I like most about having a trainer to help get me ready for this contest is that I dont have to stress about whether what Im doing is working.  I can be confident that, if I just follow his directions, I will see changes and results.  When I used to workout before, I was never quite sure if what I was doing was going to get me the best results.  (Should I be doing more cardio?  How much?  Should I lift heavy weights or lighter?  What exactly should I be eating?) Its not easier with the trainer- I still work my tail off, but the mental part is better.  I dont feel like Im spinning my wheels. 

On another note, Victorias Secret has the cutest swimsuits lately.  I ordered the one above and 2 other mix and match styles.  Love them!

This past Saturday I took off my mommy hat for the day and spent the entire day wearing my designer hat. Since entering the freelance world and become a full-time mommy, I really dont get many opportunities to immerse myself in the design world. I spent my day with a fellow designer at the TopCon design conference here in Chattanooga at Track29.



The day was a little tricky for me in that I am still nursing Isaac, but Daniel and I were able to coordinate so that he met me right before lunch and then again right before the last speaker of the day. Getting to hear speakers in my field was inspiring for me, and Daniel (along with the help of his sister, Amy) had a fun day with the boys. Isaac did melt down at the end of the day, but the witching hour is always hard no matter who is with the boys.

From a strictly design point of view, my favorite speakers were James T. Edmondson of OhNo Type Company and Bethany Heck from Microsoft. Overall fine artist, Wayne White, did a fantastic job of wrapping up the conference encouraging the attendees to find the things they love and pursue them – even if it is crazy puppets.

Illustrator, Logan Faerber, shared some of his failures and mistakes on his journey as an illustrator, and art director, Adé Hogue, shared his 6 crushing doubts. Doubts and mistakes are things all of us can identify with at some point in our careers.


Wayne White shares his crazy adventures in fine art including his work on Pee Wee Herman.

James Edmondson shared his process for developing typefaces and Bethany Heck went into depth about not being afraid to break the so-called rules of only using 3 typefaces in one work. I think the more experience you have under your belt (and more understanding of the design process) it becomes easier to break these rules. Fresh out of college, it is easier to make mistakes just by not having a good grasp of why you should or shouldnt combine certain elements.

 Logan Faerber shared some of his failures and mistakes, working with Marvel.

Adé Hogue shared his 6 crushing doubts and ways to stay creative.

It was fun getting to screen-print our own t-shirts. Print-making was among my favorite classes in college and I have always thought it would be fun to pursue again at some point. Fresh out of college, I actually purchased the equipment, but I didnt have a good space and I never really got it going. Maybe as my boys get older I will be able to create a studio space at my house. Who knows?



I am feeling very inspired and looking forward to implementing some of what I learned on Saturday into some of my upcoming projects. I have to say that I feel very blessed to have the clients that I have and that I am able to combine a lifestyle of being a stay-at-home mother who can also continue to freelance and keep my creativity flowing. 
 
 

Motherhood has maybe been a slight step back for me professionally, but it hasnt meant losing myself, or my profession. I am so grateful to be able to do both.

It has certainly been awhile since I posted, not because I havent thought about Solomon, just that I havent felt like posting. Eric and I will be celebrating our 10th wedding anniversary in a few days, which means I am closer to re-living my experiences with Solomons pregnancy. I go months without recalling anything and then some moment of the experience will creep back into my mind.

Like the other day, I received notification in the mail about the new "Red Light Cameras" that have been installed in my town. And it reminded me of the first time I drove my Buick Skyhawk after losing Solomon. I was traveling north on Jerusalem Avenue in Levittown heading towards my therapist in Sysosset and as I approached the first intersection with a traffic light I drove right through it. I was 4 blocks past when I realized the light had been red and I didnt stop. I wasnt freaked out or anything until I arrived at the therapists office and realized I could have hurt someone. That was the worst part of that particular moment.

Thankfully I have a 4-year-old who will eat almost anything (or at the very least try new things). I am a big believer in introducing as many kinds of foods as possible to my kids, not to mention I just like to try new things. So really, by default, my family kind of has to try new things. Here are the meals I cooked recently:

Loaded Steak Nachos

This meal was a winner with everyone in our family. It was a quick and easy mid-week meal. Daniel had to eat it rewarmed because he worked late, but it still tasted good reheated in the oven an hour later.

BBQ Salmon and Crispy Chickpea Salad

Jack is rarely interested in soups or salads, so for him I typically make a deconstructed version of our meal. In the case of this meal I let him skip the salad part and served it with a side of rice along with the corn and roasted chickpeas. 


The salmon had a pretty strong BBQ rub on it, so I was surprised that Jack gobbled it up. Daniel and I both really enjoyed the combination of flavors in this dish.

Mexican Tortilla Casserole
[recipe adapted from A Cup of Jo] 


For a twist on Taco Tuesday, I made this Mexican Tortilla Casserole and it was a hit. I made it to share with a friend and it was easy enough to double the recipe at the time of assembly. Instead of doubling the beans, I chose to add browned ground beef instead. This dish works great as leftovers.

Rotini With Butternut-Sage Sauce

When making this dish I decided to add crumbled sausage for some extra protein. Also since Isaac is in the beginning stages of learning to eat, I saved some of the pureed butternut squash and onions for him to have separate from the pasta. He ate a decent amount but made a face every time I spooned it into his little mouth!


This dish is a healthier version of homemade Mac-N-Cheese. The pureed squash serves as the sauce instead of cheese. I barely noticed that there was no cheese in this dish and Jack gobbled it up without a second thought.

Naan Personal Pizzas

So this recipe was a repeat from a couple of weeks ago. This time I used Naan bread instead of Pita. I think I prefer the Pita. Both are delicious though. I chopped up mushrooms as small as I could before sauteing them, in an effort to sneak them onto the pizza. Both Daniel and Jack noticed. You win some, you lose some. 


This meal is great if you need to make something quickly (plus it is easy to customize). I actually ran out of cheese and had to grate little packets of cheese – oops!

Chai Latte

I recently dug out an espresso machine that I received for Christmas several years ago. I have been treating myself to daily lattes. I decided to try out a Chai Latte in my machine. It worked out fairly well – I just placed the tea bags and spices in my coffee filter and then steamed my milk as usual. It turned out pretty well. The linked recipe tells you how to make this drink on the stove top without an espresso machine.

Hello 6 weeks!  Im happy to report that Im still sticking to my "get lean" program and Im definitely seeing results- which inspires me to continue.  I saw on Pinterest recently a quote that said, "Summer bodies are made in the winter."  Luckily, we still have some time until summer, so might as well start now!  Its a bummer to be uncomfortable in your clothes when its hot and sticky outside.

THE WORKOUTS


5 minute treadmill warmup (speed at 4.0), then go directly to planks.  I actually held a plank for 5 minutes!!! on Sunday.  (Which goes to show that often our physical ability is greater than our mental limitations.)  Having my stopwatch on my phone helps because I can see how long its been.  I just felt good and wanted to see how long I could go for.  When I passed 4 minutes, I held on until 5, but it was super hard.  The next 2 planks I could only do 2 minutes each.

Im also realizing that incorporating 3 planks into the workouts makes for a long workout- (3 planks for at least 3 minutes and 2 minutes rest in between = 15 minutes + 5 min warmup = 20 minutes before I even get to weights).  Now that Im lifting heavier, I rest at least one minute between sets, so the workouts take longer there too.  And if Im doing cardio at the end, that can be almost 2 hours at the gym on those days.  So, I may do one plank and then pushups.  Or just add in abs between sets and skip planks all together.  I could easily just do planks at home.  Well see.

Also, I want to build my booty, so Im doing squats and kickbacks every couple days (even on non-leg days).

Finally, I find that I really need more rest to recover.  My body is tired!  Im trying to get at least 8 hours a night but its hard because Im a night owl.  My alarm goes off at 6:30 a.m. and those mornings come fast! (Especially last week with the time change.)

Monday - Shoulders, 3 planks (3 min each)

Tuesday - Back & Booty, Cardio (20 minutes on stair master at Level 60)

Wednesday - Bicep/Tricep, 3 planks (3 min each), Cardio- 30 minutes on stair master at Level 60

Thursday - Legs, 3 planks (2 for 3 min- was going on 5 hours of sleep)  Cardio- 15 minutes on treadmill at 3.5 (this isnt really a cardio workout, but more of a way to stretch my legs after lifting heavy leg weights to make me less sore later).

Friday - Off

Saturday - Off 

Sunday - Shoulders & Booty, 3 planks (5 min, 2 min, 2 min)

THE MEALS

Im still on THIS MEAL PLAN.  *UPDATE:  Im adding 1/3 cup of carbs (brown rice) to the two earlier meals. 

7:00 a.m.  oatmeal, coffee with creamer, (and 3 egg whites- just started adding that this week

9:30 a.m.  protein shake (lately 1 scoop of protein powder with 8 oz 1% milk)

11:00 p.m.  lean protein and veggies and 1/3 cup of  brown rice

3:00 p.m.  lean protein and veggies and 1/3 cup of  brown rice or greek yogurt 

6:00 p.m. lean protein and veggies 

8:30-9  egg white omelet or greek yogurt 

I snacked on cashews and celery with natural peanut butter.

Its not difficult to prepare the meals since I usually cook in big batches (I find its actually more time consuming and hard to come up with different meals for each day and then cook that night), but its hard to be eating every few hours.  The times above are a guide, but if Im hungry, I eat and if Im not, I dont.  Im not "forcing" myself to eat at those times.  I also keep my portions on the smaller size, and I dont eat until Im stuffed.  Ive found that this way of eating has helped keep my energy steady throughout the day.

I hate running low on my food and worrying about quickly having to cook something, so this week Im prepared!


I use 3-cup Glad containers that I bought at my grocery store, but I found some online at Amazon too.

                                                                           

"Cheat" meals this week included: 

Monday- evening hot cocoa 

Thursday- 2 pieces of pizza


Friday- Starbucks iced tall 2-pump mocha, no whip.

Saturday- BBQ (2 ribs, loaded baked potato (but they forgot the bacon:( 1/2 cup jalepeno creamed corn.

I also had 2 of these WW ice creams bars this week.  They are really good!
