Ive been ruminating on this post for awhile.  Now that I have the experience of training for and competing in an NPC bikini contest behind me, Ive been on my own to try to maintain the body I built in those six months.  I made significant progress, going from about 25% body fat and 115 pounds to probably 15% body fat (Im not 100% sure on that number because we stopped measuring at 17 or 19%.  I was supposed to get my body fat tested at the Bod Pod, but they cancelled because the machine wasnt working), and I competed at 100 pounds.

Although I wasnt grossly out of shape at the beginning of my competition prep, I was surprised at just how hard I had to work and for how long.  The changes dont come easy, but they do come.  You can count on that if youre doing the exercise and eating properly.  So, Ive been reflecting on exactly HOW I made those changes and how I stuck to it for so long and I realized five key things about how to get in shape. 

1.  Decide that you are going to make a change.  First and foremost, you have to commit to not only wanting to make a change, but that you are actually going to make that change.  For me, a big motivator was knowing I did not want to end up in July 2014, where I was in July 2013.  I wanted to be in great shape and not feeling bad about myself.  So, the new year of 2014 marked the beginning of implementing those changes.  I knew if I started in January, Id have significant results by July.  If you set a goal (a family or high school reunion, a birthday, anniversary, vacation, or bikini contest) and back the time out so you can work towards it, keeping that goal in mind will help keep you committed and focused.  Our minds and spirit are very powerful.  When my body would tell me it didnt want to work out or eat another piece of fish, I just treated it like a child that doesnt get to tell me what to do. It didnt know best since I had already decided months ago what I wanted to achieve. Instead, I did what I knew I needed to do to get me to the goal I set.  In those "weak" moments, listen to your "higher self", the one that already made the decision to get in shape and create a new life. 


2.  Fit your day around your workout instead of trying to fit your workout into your day.   The last couple of weeks I have fallen off of the workout train and I just couldnt seem to get it to fit into my day.  Im home with my son for the summer and I wanted to spend those days with him, so hes not going to camp.  I used to workout first thing in the morning, but now, our mornings are lazy, and were chilling out in pjs watching cartoons (him) and drinking coffee (me) well past 10:00 a.m.  And then I need to be fueled up for a strong workout, so I figure, we need to wait until after lunch to head to the gym.  But, after lunch finds us heading to swim class or running errands or just not feeling like breaking up the day with a workout, so I tell myself, "Ill go when my husband gets home." But, then its time to make dinner and eat, and then get my son ready for bed and it gets late, so I say, "Ill just go tomorrow. . . . "  Sound familiar?? 

If you continue like that, youll never make it to the gym, or you will, but your efforts will be sporadic and you wont get the results you want.  You must decide in advance when you will workout (whether its at 5:30 a.m. to Insanity home videos like my friend Angela) or at lunch, or after work, or after the kids are in bed.  Then, you decide how to fit your day around your workout.  Yes, it requires planning.   Yes, some other things you might have to say no to.  But, once you get into your routine, it just becomes part of your day.  I did best to actually schedule my entire day on paper so I could visually see how my day would fit around my workout and meal plan since I ate five meals a day.  The RED indicates cardio and training sessions and the pencil circle marks indicate when I needed to eat.  I had to prep meals in advance and often eat in the car or at my sons swim lessons, etc. 


3.  Consider hiring a trainer or finding a workout partner.  A trainer isnt absolutely necessary, but if you need that person to keep you accountable to your workouts, its worth it.  You could have a friend as your accountability partner, just make sure she is reliable and wont flake on you.  You need someone tough who will keep their appointments and also, not just chat with you during the workout.  You should be making the most of your time in the gym,  working those muscles, huffing and puffing, and sweating!  

If you arent familiar with the machines, or a beginner when it comes to lifting weights, it is a good idea to use an experienced trainer so you dont get hurt.  Ive had good and not-so-good trainers in the past, but John Sherman and Monica Isles were the best.  I saw the best results with John though, because I worked out more often with him and because I followed his meal plan.  Which leads me to the next point. 

4.  Working out consistently will cause you to eat better.  Working out will only get you so far in changing your physique.  You have to eat better too.  Something about having physically worked out so hard and sweating and hurting will make you say, "That piece of cake or pizza just isnt worth it."  You start to understand how eating those extra calories and fat will translate into that much more work to get it off and you dont want it!  That is why I kept finding myself saying, "The diet isnt that hard."  Or at least not as hard as I thought it would be.  Youll look forward to (and enjoy more) the "cheat" meals on the weekend.  You can go HERE to see my bikini contest meal plan. 

5.  Once you start, small changes will keep you motivated, just stick with it!  My trainer casually remarked to me when we first started working out together, "Youre gonna like your body way before the competition."  I didnt give it too much thought at the time, but man was he right!  Although, it took a long time to get to "bikini contest" ready, I felt great in my skin long before that.  Your clothes will start fitting better, your face will change, you skin will be brighter, your energy will be higher, you will have more confidence and inner strength and that feels so good.  I started noticing changes in my body within just two weeks of working out and eating better, but the changes kept coming as long as I stuck with it.   In time, you WILL reach your goal.

I want to be as transparent as I can on my blog, and this last week I didnt do a lot of cooking. After being gone for a week, I am still settling into normal life. We ate out some and had a lot of leftovers. Sometimes that is just life! Here are the links to the recipes I tried this week, along with my thoughts on each:

Pumpkin Pie

You can never go wrong with Pumpkin Pie. I made this to celebrate Canadian Thanksgiving. Jack and I gobbled it up over the course of the week.

Spaghetti with Meat Pomodoro Sauce

This is the same sauce I used with gnocchi a few weeks ago, and it worked great with Spaghetti as well. I added crumbled Italian sausage for some protein.

Chicken Enchilada Casserole

I dont make a lot of casseroles, mostly because they make too many leftovers and there is only so many times you can eat leftover enchiladas, but this is a good dish. 

Probably better for a crowd though! I accidentally bought a green enchilada sauce instead of the red, but it still tasted good. I served it with corn chips (maybe carb overkill since the dish has rice it in), very good though.

Brown Sugar Turkey Meatballs with Mashed Potatoes and Carrots

I actually made this to take to a friend. It is some serious comfort food. I will have to make it again for us. Definitely a winner for a quick comfort food meal.

Talk about a crowd pleaser! I made this for our small group and it we about finished the pan off... granted the were 16 people that dug in, this stuff went fast!

Hi friends!  Im trying something new this week to shake up the semi-funk Ive been in lately with my workouts.  I only worked out once last week because I felt too busy with all the commitments going on.  Some weeks are like that, but they leave me feeling icky.  And, as yall know, when we workout, our eating is typically better.  We dont workout so hard during the week, just to "blow it." So, this week, Im doing a week (Monday - Friday) of group workouts.  I feel like I need the boost of energy and support you get when working out in a group.  Theres a commitment because it starts and stops at a specific time and you do get a great workout.  Once the class gets started, its rare that someone leaves without completing that class. 

I printed out the schedule and class descriptions of group exercise classes at my gym and found they typically have three options for the time of day I like to go (in the morning right after dropping my son off at school).  This works perfect for me, I just get up, get dressed/eat my protein pancake/get my son fed and ready for school and were off.  No hair, makeup, or coffee (I prefer to linger with that after I get home and showered).  When I get home, I know my day is off to a great start because I got my workout out of the way! 

I chose a variety of classes so that I can experience different types of exercise and instructors.  If I really like one, Ill consider committing to that class for a longer period.  On Tuesdays, Im sticking to our school running club, which is just a few women that run the 3-mile track at our local park right after drop off.  

Heres my schedule of GROUP CLASSES for this week with the class description below:

Monday- Yoga Body (8:30 - 9:30) YOGA
A well-rounded hatha yoga practice that will lightly warm you up and stretch you out while beginning to train your body for more advanced work.  Most appropriate for those who have prior yoga experience and are physically fit.  

Ive never tried yoga (well, once, over ten years ago), so well see about this.  There was no other "beginner" yoga class offered at my timeframe.  Ive have a couple of very close girlfriends who rave about yoga, and Im eager to try it for the mind/body connection.  Any advice for this first-timer? 

Tuesday- Running Club (8:15 - 9:00) CARDIO
Run/walk intervals for 3 miles outside. 

Weve increased our stamina lately, so were running more, walking less. This is great because we are done quickly and I can get on with the rest of my day sooner. 

Wednesday- Cutting EDGE (8:30 - 9:30) STRENGTH
A more refined format including traditional weigh training combined with timed cardio intervals consisting of basic, athletic movements specifically designed to enhance the strength portion of the workout experience.

I definitely want to keep my strength up and my muscles toned, so Im excited about this class.  I bet it will be hard- timed cardio intervals always are, especially if you push yourself. 

Thursday- Cycle Tech (8:30 - 9:15) CYCLE
An indoor cycling class designed to prepare you for race day; some of the techniques, specific ride profiles and drills are those used by competitive cyclists. 

Ive met the instructor who teaches this class and I think hes a pretty hard-core cyclist.  Im interested to see how his teaching technique is.  I hope the music is good!

Friday- Muscles (8:30 - 9:30) STRENGTH
A muscle conditioning class for all levels, using various resistance equipment to build strength resulting in a total body weight workout. 

My friends say the instructor who teaches this class is the best, and I cant wait to see for myself!

Hitting "publish" on this post and sharing this goal with you will keep me accountable to completing all these classes.   As far as my diet goes, my goal is simple- dont eat any sweets (ice cream, cookies, brownies, etc.) and drink lots of water- 55 ounces a day (about half my body weight in ounces).  


I will report back and let you know the classes went and whether I plan to stick with it.

Despite my valiant efforts to finish 2013 healthy and strong, I find myself here in February a good 5 pounds heavier than Id like to be.  Five extra pounds on a barely 51 woman makes a difference.  I notice it most in that my pants are too tight, even my next-size-up jeans.  I spent last weekend in Las Vegas and Im sure that didnt help things.  So, Im back at it determined to shape up this month.  Its my birthday  month too, so thats a perfect time to hit it hard!

I figured I need to get back to basics with my meals and Im doing a typical lean body meal plan, which consists of eating 5-6 small meals every 3 hours, with 20-30 grams of protein per meal.  The Jamie Eason Live Fit training program recommends the following:

I started Sunday and for this week, my meals look like this: 

7:00 a.m.  1/2 cup OATMEAL with raisins, sliced almonds, cinnamon and milk.  Coffee and creamer (gotta have it)


10:00 a.m.  Protein shake 

12:00 p.m.  TEX MEX with fresh pico de gallo (but Im using chicken this time)


3:00 p.m.  Celery or apple or rice cake with peanut putter

5:00 - 6:00 p.m.  TURKEY CHILI


8:00 p.m.  Greek yogurt or egg white omelet 

Thats it.  All day every day for a week.  Ill have a "cheat meal" on Friday and probably Saturday too.  Then, back to it the next week and all of February, just switching up the meals with different lean proteins and veggies.  I eat every several hours anyway, so thats not difficult for me.  I have also seen really good results when Ive stuck to this kind of eating, so Im excited to get going again! 

I find its actually easier (time wise) to follow this plan because I just do one grocery trip on Sunday and make a big batch of chili and Tex Mex and portion it out for the week.  Im not staring into the fridge wondering what to make each night.  Plus, once the meals are cooked on Sunday, its just popping them into the microwave to heat up.  Super easy.  People always ask, "But what do you feed your family?"  My husband wants to lose weight too, so hes on board.  If he wants more variety, hell eat out for lunch.  My son still mainly eats grilled cheese and a side of something like yogurt or an apple for dinner.  

For my workouts, Im pulling some of the Jamie Eason Live Fit Training workouts being sure to work each body part every week and adding 20 minutes of cardio at the end of the workouts.  Right now, Ive been doing my cardio on the stairmaster, alternating the speed to keep it intense.

Its a Monday morning and I am sitting by the twinkle lights of our live Christmas tree, listening to the wind howl and the rain pitter patter on the windows while I make my meal plan for the week. Playing catch up on my blog (still), but here are some of the meals I cooked recently:
 
 
 
Sicilian Chicken Soup

This lovely meal is perfect for a cool fall or winter day. The spices are lovely, and a rotisserie chicken from the store works in a pinch if you are short on time. We love to top this dish off with our favorite croutons. If your child does not eat soups yet, this meal is hearty enough to serve vegetables and chicken without the broth. Thankfully Jack is finally starting to eat the entire soup!

 
 
Apple Muffins

A couple of weeks ago Jack was sick, suffering from HFMD. There were very few things he wanted to eat. He took comfort in wearing his IronMan costume and he specifically requested Apple Muffins to make him feel better. He was basically eating ice cream around the clock, so I was willing to make him any kind of real food. Thankfully I had apples in my fruit bowl! These muffins were quick to make. I left off the topping and they still tasted great. I had one very happy (and full) Ironman.

 
One-Pot Skillet Lasagna

Traditional lasagna is a pain to make. That is why I have really embraced the idea of skillet lasagna. This dish is really hearty, with meat and extra vegetables snuck in. It definitely feeds a crowd and makes great leftovers.

This dish was so good. The blog Damn Delicious is quickly becoming my go-to for meal planning. The recipes never disappoint and they are always packed with serious flavor. If you havent discovered this food blog, you need to! I do want to note that Daniel is not a fan of dark meat and has requested I make sure to include the white meat as well. I really liked the flavors of the dark meat – to each his own! 
 
 
 
Chili Cheese Biscuit Bake

This was a decent meal, but I dont think the biscuits fully cooked. Also, Daniel did not like the use of Italian sausage and Jack didnt really care for it. You win some, you lose some.
 
 
Broccoli, Cheese and Potato Soup

This was a crowd pleaser. Daniel does not like broccoli, but enough cheese will cure that! For the potatoes, I used leftover mashed potatoes. Since it was pureed, this was a great meal to serve to Isaac as well. Though, truth be told, every time we fed it to him he wound up covered in broccoli!

I mentioned in a previous post that I thought coffee was my love language, the truth behind that statement is that quality time is what fills me up.


Daniels work schedule over the last two years hasnt provided a lot of time for quality time, so a last-minute anniversary trip to Gatlinburg was something we were in desperate need of.


It was a trip with kids in tow, but sometimes you just have to make it work. 


We rented a little cabin just outside of Gatlinburg and squeezed in some of the activities that we like best. It has actually been 5 years since our last trip to these mountains and many memories kept flooding back as we drove around and visited old spots we loved. 


Reminiscing is good for the soul and we have a lot of fond memories from experiences in these mountains.


My favorite thing to do on vacation is to eat out for breakfast and we had 3 amazing breakfast experiences, which I will share in a later post.

 

Our first day in the mountains was cold with snow flurries swirling around. We used the day to visit shops that Daniel wanted to see (Daniel and Jack had a blast at Buds Gun Shop, Coleman, the Dewalt Store and the Smoky Mountain KnifeWorks).


We finished out our day with a visit to Bass Pro Shop where we snagged a time slot to see Santa. The boys were both troopers had we finished the day with dinner at Bass Pro.

 

Saturday we woke up to sunshine and decided it was a perfect day to be outside. After a big brunch, we headed up to Newfound Gap. We had hoped to drive up to Clingmans Dome, but the road was closed due to ice.

 

We bundled the boys up and stepped out of the car to freezing temps. The outside temperature was a balmy 30ยบ but the windchill was probably in the teens. We huddled together for photos before hurrying back to our car to warm our frozen cheeks and fingers.

 

After Newfound Gap, we went back down to hike to Laurel Falls (I will share more in a later post). Our love of the outdoors must shine through because the first thing we were asked when we stepped out of the car was, "You guys look like you hike a lot." This from a stranger at the trailhead who had a question about the area.

 

The Laurel Falls trail goes up for about a mile on a paved path that has steep drop offs on one side. We decided to push Jack in the BOB stroller and the entire trip he kept saying, "Daddy, youre making me nervous!" Thankfully we made it to the 80-ft falls without a hitch.

 

It was a fun weekend and Im so glad we took a moment to celebrate 13 years of marriage by spending time together as a family.

I share a lot of pictures of meals on Instagram and Facebook (love me or hate me), and the reason I do this is to share the fantastic recipes that I have come across for meals; and also to encourage my friends who arent meal planners or dont feel motivated to cook.

I have always been an avid meal planner (thanks mom!), and I rarely cook the same thing twice, so there is a lot to share.

Now that the weather is cooling down, I am grilling less but we are still enjoying delicious food. I try to shop the perimeter of the grocery store as much as possible (always with a list in hand so that I dont forget things) and that means a lot of our meals include seasonal produce.

This is what I served recently.


Grilled Maple BBQ Chicken with Corn on the Cob and Cornbread
The cornbread was a flop (it tasted delicious, but wouldnt cook through the center for some reason)

Tuscan Tortellini Soup, garnished with cheddar cheese and croutons
I took this meal to some friends – doubling the recipe was easy and it was really delicious, and made excellent leftovers.

Baked Spaghetti with Roasted Okra
Jack devoured this, he especially loved the okra, and it worked great as leftovers. Side note: I left out the cream cheese and sour cream and doubled the cheese instead.

Pancake Sausage Bites with Fruit
Sometimes you just need breakfast for dinner. Jack kept sneaking the cooked sausage before I could get it battered and fried! This is definitely a crowd pleaser, and would be perfect for a brunch.

One-Pot Chicken, Quinoa, Mushrooms and Spinach
Another one Jack gobbled up, sans the spinach. Hes three, the wont eat everything I give him, but he does at least try it all. Mostly.

For what its worth, the days I dont post to IG/FB are the days we have a planned eat out, we are eating leftovers or we ordered pizza because I just didnt feel like cooking. No one has it together all of the time and I hope you dont come to think that I do.
