Okay guys, I finally finished the Live Fit 12 Week Trainer and got a pic snapped!  The picture on the left is me at Week 2 and the picture on the right is a few weeks after I completed week 12.  The changes may appear subtle, but I can say I feel more toned and tighter overall, especially in my shoulders, abs, and legs.  There were many times during the program where I felt like "this is hard!" but I didnt ever want to give up because I knew the results would be worth it.  I also came to crave the workouts because they are such a big stress reliever in my life.  I cannot tell you how much better you will feel after a hard, sweaty workout if you are having a bad day, tough time, or just need time to yourself.  Fitting in those workouts is a challenge, but I did them before work, after work, during the day, and on weekends- whatever worked.

The 12-week program is broken into 3 phases, which I posted about in detail previously.  Click below to read more.

This program really works- especially if you follow the food (5-6 small meals every 3-4 hours).  I followed it pretty closely until about week 10, then fell off in still eating pretty well, but not often enough.  

Because I started out in decent shape, I feel like I reached my goal during Phase 2, but I still wanted to complete what I started.

After having completed this 12-week program, I can say that it REALLY works.  Ive worked out pretty consistently since my early twenties, but never put on muscle and leaned out like this because I didnt put the workouts, supplementation, and food all together for a set time period.

Some people have asked what I plan to do now that Ive completed the training program.  I have continued doing some of my favorite workouts from the program and tried Pilates for the first time last week and really liked it.  I plan to do more spinning and running outside too.

Are you in the mood for a hearty salad?  I found this mediterranean chickpea salad recipe in Barefoot Contessas latest cookbook, Foolproof and enjoyed it all last week!  Its healthy, delicious, colorful, and very fast to assemble.

Dice a couple of tomatoes, a cucumber, scallions, and add some chopped basil.


Drain and rinse a can of chickpeas.



For the dressing, you add lemon juice, garlic, salt, pepper and olive oil and whisk to combine. 


Toss it all together. 


Then add feta cheese.


For a hearty accompaniment, I baked two pita bread slices at 350 for about 10 minutes.  A touch of olive oil and theyre good to go! 


I couldnt get enough of this salad.  Hope you like it!

Hi everyone!  It’s Jennifer from The Chronicles of Home and I’ve got a delicious spring salad to share with you today.


We ate this mushroom, asparagus, and radish salad for dinner recently alongside roasted chicken thighs but I could have eaten it alone as a vegetarian meal.  In fact, I did eat the leftovers by themselves as my lunch the next day and I have great news - this is one of those salads that is fantastic leftover.

The mushrooms and asparagus are cooked and warm when you add them to the arugula, which softens and wilts just slightly.  The flavors are springy and fresh but I found the salad to still be hearty and satisfying, which is just what I’m craving this time of year.


Mushroom, Asparagus, Radish, & Arugula Salad

Ingredients
1 medium bunch asparagus, ends trimmed and cut into 1” pieces
1 tbsp. unsalted butter
2 tbsp. olive oil, divided
1/4 c. shallot, chopped
2 garlic cloves, minced
8 oz. cremini mushrooms, sliced
2 c. chicken stock
1 tsp. dried thyme
1 tbsp. fresh chives, chopped
1 tbsp. flat-leaf parsley, chopped
1 tbsp. grated parmesan or romano cheese
2 c. arugula
8 radishes, sliced
1 tsp. fresh lemon juice

Blanch asparagus in a pot of boiling salted water for 2 minutes.  Drain in a colander and rinse with cold water to stop cooking.

Preheat oven to 350º.  Melt butter and 1 tbsp. olive oil in a large ovenproof saute pan over medium-high heat.  Add shallot and garlic.  Sprinkle with salt to taste and cook 1 minute.  Add mushrooms, chicken stock, and thyme and bring to a boil.  Transfer to oven and roast until mushrooms are tender, about 30 minutes.  Return to stovetop and boil over high heat until liquid evaporates.  

Lower heat to medium-low and add aspargus, chives, parsley, and parmesan.  Stir to coat.  Season to taste with salt and pepper.

Toss arugula, radishes, remaining 1 tbsp. olive oil, and lemon juice in a large bowl.  Season to taste with salt and pepper.  Add mushroom and asparagus mixture and toss gently to combine.

I made a Greek pasta salad with grilled chicken the other night for dinner and thought you might like to try this recipe with your family.  Its classic Greek ingredients - tomato, cucumber, olives, red onion and feta cheese with whole wheat pasta, grilled chicken, and a homemade vinaigrette dressing.


I actually prefer this salad cold, but you can eat it warm also. I used penne pasta, but sometimes I use spirals.  For busy weeknights, I like meals like this that I can just throw together.  Of course, its nice to have left-overs for lunch later in the week too.

Ingredients (Salad)
Serves about 6

Tomato- 3 small diced
Cucumber- 1 large diced
Olives- 1/4 cup sliced
Red onion- 1/2 cup
Feta cheese- 3/4 cup crumbled
Whole wheat pasta- about 2 cups cooked
Grilled chicken- about 4 large boneless, skinless breasts
(fresh basil would be good in this salad but I didnt have any on hand)

Ingredients (Vinaigrette)

Whole Grain Mustard- 3-4 teaspoons
White wine vinegar- 1/8 cup
Dried basil- 1 teaspoon
Salt- dash
Pepper- dash
Olive oil-1/4 cup

  • Combine all the ingredients together except the olive oil and stir.  Then whisk in the olive oil.  
  • You can adjust the ingredients depending on your taste preferences.

Directions

  • Boil the pasta according to package directions.
  • Spray a grill pan with cooking spray and cook the chicken until done.  Then cut into cubes.
  • Add the diced tomato, cucumber, olives, onion, and cheese with the pasta and chicken.
  • Pour the vinaigrette over the salad and toss it all together.

As you know, life is full of ebbs and flows.  Although I always exercise at least semi-regularly, there are times when Im super dedicated and work out intensely and there are times when other things demand my attention and there just arent enough hours or energy in the day.  At those times, I may let exercise slip, but I pay for it and dont feel as good.

Ive had a lot going on with work, relationships, my dads illness, my son starting pre-school, my blog, and on and on.  We all have struggles so I know you can relate.  When things are extra stressful in my life, exercise helps me cope.  And Ive been doing a lot of that lately.  Getting really good and sweaty and fighting wars in my mind.  Cursing cancer and feeling blessed for the experience of love.  Im also trying to add in periods of rest.  Stillness.  Time to just

Time to listen to my heart.  Time to share my thankfulness and blessings with God.  And time to listen for HIS guidance.  I dont know why its so hard to just take these moments for myself, but I know they are necessary.  I find that right after dropping my son off at school, just sitting alone in my car for a few quiet moments can help ground me and prepare me for the day.  But its not enough.  There needs to be more time to turn off the constant slew of thoughts, fear, worry, anxiousness, sadness.

I set out some goals for myself for 2013 and they have been really challenged.  Im "renewing my vows" :) to myself right now.  I feel like if I dont examine my life and whats important and how I want to live, then I will just be on the wheel, going nowhere.  In the stillness, answers come.  Through exercise and getting stronger answers come.


Im wishing moments of peace and stillness for you too.  Have a beautiful day.

Hi there, Honey We’re Healthy readers!  I’m back with a little something I haven’t done before here on Megan’s blog - dessert!  


I’m a big believer in moderation when it comes to food and usually indulge in desserts on the weekends.  This luscious panna cotta manages to be both an indulgence and a healthy choice - does it get much better than that??

My husband compared the taste to an orange creamsicle and as soon as he said it, I said, “Yes!  That’s exactly what it tastes like!”  But a more sophisticated creamsicle.  A creamsicle for refined adults, darling.

Traditional panna cotta is made with heavy cream while this lighter version uses 2% milk and Greek yogurt.  The orange zest adds the perfect little punch of flavor and the threads of orange mingled with vanilla bean specks is really quite pretty.  I loved it topped with kiwi slices, blackberries, and raspberries for some added color and a nice dose of antioxidant goodness.

And just a quick note - this recipe is not hard to prepare but it does have to sit in the fridge for a good 8 hours to set.  So be sure to think ahead if you plan to make it!


Greek Yogurt Panna Cotta

Ingredients
1 1-oz. package unflavored gelatin
1 1/2 c. 2% milk
1 tbsp. vanilla bean paste*
1/2 c. sugar
finely grated zest of one orange (I used a microplane to zest a blood orange)
2 c. plain 2% Greek yogurt
grapeseed oil
berries for topping

Pour 1/2 c. milk into a small bowl and sprinkle gelatin over the top to soften.  Let sit without stirring for about 10 minutes.

Meanwhile, pour the remaining 1 c. of milk into a small saucepan over medium heat.  Add vanilla bean paste, 1/2 c. sugar, and orange zest and stir until the sugar dissolves and the mixture starts to simmer.  Remove from the heat and add the gelatin mixture.  Whisk to fully dissolve gelatin.  Transfer to a large bowl and set aside about 10 minutes to cool, then whisk yogurt into mixture until smooth.

Drizzle a bit of grapeseed oil into each of six ramekins and spread on bottom and sides with fingers or a napkin.  Evenly divide yogurt mixture among the ramekins.  Cover and refrigerate until set, 8 hours or up to 2 days ahead of time.

When ready to serve, run a butter knife along the edge of the panna cotta, all the way around the inside of the ramekin.  Invert it onto a plate and give it a good shake or smack on top of a padded surface (I used an oven mitt!) and remove the ramekin.  Top with berries and serve.

*Vanilla extract can be substituted for the vanilla bean paste but you will lose the lovely little vanilla bean flecks in the panna cotta.  You can also substitute a whole vanilla bean - cut in half, scrape the seeds out, and add the seeds and pod to the milk mixture on the stove.  Remove the pod before whisking in the yogurt.

Hi everyone!  It’s Jennifer from The Chronicles of Home and I’m excited to be back here at Honey We’re Healthy sharing another healthy and delicious recipe with you.

Warm(ish) weather has finally arrived here in the Boston area, where I live, and we celebrated last weekend by bringing our outdoor dining table out of hibernation and having dinner on the deck.  



We grilled some marinated steak tips, had my favorite crispy oven potatoes (both recipes on my blog this week!), and big bowls of this Greek chopped salad with creamy yogurt dressing.  It was so fresh, colorful, and tasty and just the perfect kickoff to al fresco dining season here in the northeast.



Greek Chopped Salad
1 seedless cucumber
1 c. grape tomatoes, halved
4-5 radishes, cut into quarters
1 c. black olives, halved or quartered
1/2 c. crumbled feta cheese

Creamy Yogurt Dressing
2 tbsp. olive oil
1 1/2 tbsp. lemon juice
3 tbsp. Greek yogurt
1/2 tsp. dried oregano
1/4 tsp. salt
ground pepper to taste

For the cucumbers, cut off the ends, then cut lengthwise in half and then half again.  Chop and add to a medium bowl.  Add tomatoes, radishes, olives, and feta.  Season with salt and pepper.

For the dressing, whisk all ingredients until well blended and pour over salad.  Toss gently and serve.

Hi friends!  I'm definitely back in the workout/eat healthy grind, training with my trainer 3 times a week and doing 30 minutes of cardio 4 times a week.  It feels good to be back to it and I'm already noticing my jeans fitting better again, but being back on my meal plan where I eat every 3-4 hours is where I feel the most benefit.  If you're like a lot of women, you might actually skip meals (and I'm guilty of that too!) but eating consistently throughout the day keeps my energy level constant and there's no energy dip mid-afternoon.

If I'm in a pinch and can't eat a whole meal (or I'm just not hungry enough) around 3:00 p.m. (the time I'm typically heading out the door to pick up my son from school), I'll grab a Greek yogurt because it's delicious, low calorie, and full of protein.  

I was asked by Yoplait to try their Yoplait Greek 100 Yogurt, and since it's something I eat anyway, was happy to try their brand and flavors.  I didn't realize Yoplait made Greek yogurt, so I was surprised to see the varieties of flavors they had.  To name a few:  Coconut, Honey, Banana Caramel, Orange Crème, Apple Pie, Strawberry Cheesecake, Mango, and Key Lime.

My favorites are Peach and Honey.  My husband likes Strawberry Cheesecake and Mango. So yummy!
