Please join me in welcoming back Honey Were Healthy contributor Jennifer of The Chronicles of Home.  She never disappoints with her recipes and today is no different.  As you know, we love pancakes around here, and today Jennifer is sharing how she makes multigrain buttermilk pancakes.  Enjoy!


Multigrain Buttermilk Pancakes

Buttermilk pancakes are sort of the gold standard when it comes to pancakes.  When youre looking for a fluffy, pillowy, nostalgically good pancake, buttermilk is the way you want to go.  

Classic buttermilk pancakes, however, while delicious, dont have a whole lot of redeeming health qualities.  Theyre usually made with white flour and white sugar and will probably leave you hungry again in a few hours.

This multigrain version of a classic buttermilk pancake includes whole wheat flour, cornmeal, oats, and flax seed meal.  It swaps honey for most of the white sugar as well.  You can expect a fluffy, lightly sweet pancake with a bit more tooth and heartiness to it than a traditional buttermilk pancake.  For me, its the perfect mix of classic and healthy.  



Ingredients
1 c. whole wheat flour
3/4 c. all-purpose flour
1/3 c. whole cornmeal
1/4 c. old fashioned oats
1/4 c. flax seed meal
2 tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1 3/4 c. buttermilk at room temperature
4 tbsp. grapeseed oil
1/4 c. honey
3 eggs at room temperature

*To bring buttermilk to room temperature microwave it for 20-30 seconds in a glass measuring cup.  To bring eggs to room temperature, let them sit in their shells in a bowl of hot tap water while you prep the other ingredients.

Heat a griddle or nonstick frying pan over medium heat.

Whisk all of the dry ingredients in a large bowl to blend.  

In a separate bowl, whisk the buttermilk, grapeseed oil, honey, and eggs until combined.  

Pour the wet ingredients over the dry and fold with a rubber spatula until just combined.  The batter should be a bit lumpy.

Spoon several tablespoons of batter in four puddles onto the hot pan and let cook for a few minutes, until little bubbles form and the underside is golden.  


Flip and cook another few minutes, until pancakes are cooked through. 

Serve warm with pure maple syrup and fresh berries.

Each serving of AllWhites has 5 grams of lean protein and 25 calories without fat or cholesterol or shells!  If you are on Weight Watchers, they give AllWhites 0 PointsPlus value per serving (PointsPlus value takes into account the food’s protein, carbohydrates, fat and fiber).  You can use AllWhites in any recipe that calls for eggs.  The convenience of simply pouring the AllWhites into your recipe as opposed to having to crack and separate your eggs yolks from the whites is genius!

Egg Scramble

I call this dish "egg scramble" because I like to simply dump all the ingredients into a hot skillet and "scramble" them around until they are all cooked.  I usually eat this on a weekend for breakfast, or at night for my last meal.  


Ingredients

  • Cooking spray
  • AllWhites® egg whites - about 3/4 cup
  • Onion- 1/4 cup chopped or less 
  • Turkey ham - 1 slice, chopped
  • Cherry tomatoes- 5 or as many as you like
  • Spinach- large handful
  • Low fat cheese- 1 slice
  • Mushrooms - 1/2 cup (optional)
Directions

Spray cooking spray in a skillet over medium-high heat, add a small chopped slice of turkey ham, bit of diced onion, a few cherry tomatoes, and a bunch of spinach.  After the spinach cooks down a little, and the rest of the ingredients are browned, I add about 3/4 cup of AllWhites (depending on how hungry I am).  I just keep stirring until its all cooked, then, turn off the heat and add some low fat cheese.  Mushrooms would be good in this too.  

For recipe purposes:

3 tbsp. of AllWhites = Approx. 1 large egg
1/3 cup of AllWhites = Approx. 2 large eggs
3/4 cup of AllWhites = Approx. 4 large eggs


AllWhites are sold in regular grocery stores, right next to the eggs.  The cartons look like the photo below if you arent familiar.  They last a while in the fridge.

Hi friends!  I'm definitely back in the workout/eat healthy grind, training with my trainer 3 times a week and doing 30 minutes of cardio 4 times a week.  It feels good to be back to it and I'm already noticing my jeans fitting better again, but being back on my meal plan where I eat every 3-4 hours is where I feel the most benefit.  If you're like a lot of women, you might actually skip meals (and I'm guilty of that too!) but eating consistently throughout the day keeps my energy level constant and there's no energy dip mid-afternoon.

If I'm in a pinch and can't eat a whole meal (or I'm just not hungry enough) around 3:00 p.m. (the time I'm typically heading out the door to pick up my son from school), I'll grab a Greek yogurt because it's delicious, low calorie, and full of protein.  

I was asked by Yoplait to try their Yoplait Greek 100 Yogurt, and since it's something I eat anyway, was happy to try their brand and flavors.  I didn't realize Yoplait made Greek yogurt, so I was surprised to see the varieties of flavors they had.  To name a few:  Coconut, Honey, Banana Caramel, Orange Crème, Apple Pie, Strawberry Cheesecake, Mango, and Key Lime.

My favorites are Peach and Honey.  My husband likes Strawberry Cheesecake and Mango. So yummy!
