Okay guys, I finally finished the Live Fit 12 Week Trainer and got a pic snapped!  The picture on the left is me at Week 2 and the picture on the right is a few weeks after I completed week 12.  The changes may appear subtle, but I can say I feel more toned and tighter overall, especially in my shoulders, abs, and legs.  There were many times during the program where I felt like "this is hard!" but I didnt ever want to give up because I knew the results would be worth it.  I also came to crave the workouts because they are such a big stress reliever in my life.  I cannot tell you how much better you will feel after a hard, sweaty workout if you are having a bad day, tough time, or just need time to yourself.  Fitting in those workouts is a challenge, but I did them before work, after work, during the day, and on weekends- whatever worked.

The 12-week program is broken into 3 phases, which I posted about in detail previously.  Click below to read more.

Phase 3 (Weeks 9-12) 

This program really works- especially if you follow the food (5-6 small meals every 3-4 hours).  I followed it pretty closely until about week 10, then fell off in still eating pretty well, but not often enough.  

Because I started out in decent shape, I feel like I reached my goal during Phase 2, but I still wanted to complete what I started.  


Week 9


After having completed this 12-week program, I can say that it REALLY works.  Ive worked out pretty consistently since my early twenties, but never put on muscle and leaned out like this because I didnt put the workouts, supplementation, and food all together for a set time period.

Some people have asked what I plan to do now that Ive completed the training program.  I have continued doing some of my favorite workouts from the program and tried Pilates for the first time last week and really liked it.  I plan to do more spinning and running outside too.

Are you in the mood for a hearty salad?  I found this mediterranean chickpea salad recipe in Barefoot Contessas latest cookbook, Foolproof and enjoyed it all last week!  Its healthy, delicious, colorful, and very fast to assemble.

Dice a couple of tomatoes, a cucumber, scallions, and add some chopped basil.


Drain and rinse a can of chickpeas.



For the dressing, you add lemon juice, garlic, salt, pepper and olive oil and whisk to combine. 


Toss it all together. 


Then add feta cheese.


For a hearty accompaniment, I baked two pita bread slices at 350 for about 10 minutes.  A touch of olive oil and theyre good to go! 


I couldnt get enough of this salad.  Hope you like it!

When I did the Jamie Eason 12-week trainer, one thing she recommended was drinking a protein shake within 30 minutes of working out to aid in muscle growth and recovery.  I do this pretty religiously, making my shake as soon as I get home or ordering one at the gym if Im not coming straight home after my workout.  Protein is essential for muscle development and recovery, but you can get the adequate amount from whole foods, like meat, fish, beans, egg whites, nuts, and milk too.

Im usually a protein powder plus water and a few ice cubes kind of girl, but lately Ive been trying more fresh fruit and veggie smoothies (with protein powder).  The other day, I added about 6 ounces of Odwalla Superfood drink to my protein powder and it tasted so good.  Although Odwalla is made with all natural ingredients, the calorie content and sugar is high, so Id use it sparingly.  Mixed frozen bagged fruit is usually what I use.



Since I dont like a huge shake (it feels so daunting- like a chore to chug down), I make just a regular sized glass or mason jar size.  


I add about a scoop and a half of my protein powder (30 grams of protein) as opposed to the recommended 3 scoops (60 grams) because I dont think I can process that much protein at once, nor do I need it.  Im currently using Amplified Wheybolic Extreme 60 and I like it because it has amino acids (great for muscle growth and energy).  I have the chocolate powder too and just blend it with water and a few ice cubes and its pretty good.

The best results Ive seen working out were when I was adding BCAA (branched chain amino acids- Amino Fuel) to my diet.  The BCAAs are among the nine essential amino acids for humans, accounting for 35% of the essential amino acids in muscle proteins and 40% of the preformed amino acids.  Its easy to do- I add 3 tablespoons of the liquid right into my water bottle when I work out.  It tastes like orange juice, so its like drinking citrus water.  But, if I dont put the Amino Fuel into my water, I just add it to my shake.  

Chia Seeds are another ingredient in my diet (they are full of omega-3 and fiber) and go in my protein pancakes or oatmeal, but Ill also add a teaspoon to my shake.  Ive gotten hooked on mango lately and this Bolthouse Farms mango drink is good (but again, sugary- sweetened with fruit- so use sparingly).  



Ill also add about two big hand-fulls of spinach (the pre-washed bagged kind) to the mix.  I feel good knowing Im getting my greens in. 


I tried adding two small carrots to a smoothie and have to admit, I didnt love it.  It wasnt terrible, but I dont think Ill do that again.  


I think the point is to just experiment to see what you like, what combinations taste best to you and what other nutritious things you can add to your shake.  After looking at the nutrition on the prepared drinks, Ill probably just stick to my bagged frozen fruit.

Hi everyone!  It’s Jennifer from The Chronicles of Home with another healthy recipe for you.  I picked up a recipe card from my Whole Foods’ bakery counter a few weeks ago for Flax and Honey Banana Bread and have been so excited to make it.  I adapted the recipe a bit but the results were delicious and just the healthy bread I was hoping for.

The bread was sweet but not too sweet, hearty and satisfying but still just the right amount of cakiness to it.  The banana and coconut flavors complement each other so beautifully.  My girls gobbled this up for breakfast the morning I made it and happily ate more that afternoon as a snack.  I’ll be adding this to my repertoire and will probably make two loaves next time so I have one to freeze!



Coconut Flax Banana Bread

3/4 c. mashed bananas ( about 2)
3/4 c. unsweetened vanilla almond milk
1/4 c. honey
1 1/2 c. whole wheat pastry flour
2 tbsp. flaxseed meal
1 1/4 c. shredded coconut
1 tbsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. kosher salt

Preheat oven to 350ยบ.  Line a loaf pan with parchment paper down the length and the width.

In a large bowl, whisk banana, almond milk, and honey.  Add flour, flaxseed, 1 c. coconut, baking powder, cinnamon, and salt.  Fold with rubber spatula just to combine.

Transfer to pan, sprinkle with remaining 1/4 c. coconut and bake until golden and cooked through (test with a toothpick), about 55 minutes.

Let cool a few minutes, then lift out of pan using parchment and slice with a serrated knife.

When Im looking for something healthy and high in protein that I can eat over and over to help lean out, (fitness model) Jamie Easons meatloaf muffins fit the bill.  I made them for dinner, then had them for the next several lunches and dinners until they were gone.  A serving size is 1 or 2 for me, depending on how hungry I am and what Im having with it. This recipe makes 12.


    Ingredients

    *Quaker Oats - Quick 1 Minute - Dry, 1 cup 
    egg white, fresh, 3 large (I used All Whites)
    Onions, raw, 1 cup, chopped 
    Celery, raw, 1 cup, diced (I didnt have any celery, but used a red bell pepper instead)
    *Jenni-O Extra Lean Ground Turkey Breast, 2.5 lbs (I mixed that and Lauras lean beef)
    *Ground cumin, 0.5 tsp 
    *Herb - Thyme, Dried Ground (1 tsp), 1 gram 
    *Mustard Yellow, Emirels Mellow Yellow (1tsp/5g), 2 tsp 
    *Black pepper (spice) 2 tsp 
    *Chipotle pepper, ground, 2 tsp (I omitted this and used salt-free seasoning)
    Salt, 1 tsp 
    Garlic powder, 2 tbsp (remove) (I used 3 fresh cloves)
    - I also added a couple dashes of Worcestershire Sauce




I chopped the onion, red pepper and garlic.


And then combined all the ingredients into a large mixing bowl.  Using my hands, I portioned the mixture into 12 large meatballs. 


Bake at 350 for about 35 minutes or so.  I reheat them in the microwave for about a minute. 


For this dinner I steamed up some broccoli and asparagus as a side veggie.  I like a little ketchup on the side too.  I like how the red pepper looks in the meatballs, Ill probably add green or yellow next time also.

Sometimes, like last night, all I wanted to eat was a big fresh bowl of caprese salad.  Tomatoes, mozzaralla, basil and olive oil.  Can it get any simpler or more beautiful?


I buy cherry tomatoes, mozzarella balls in liquid, and fresh basil for the best tasting salad.


Slice the tomatoes in half with a serrated knife.


Then the cheese.  Try not to eat it all before it gets into the bowl.


Tear up some fresh basil and toss it all together.  Add a sprinkle of olive oil and a dash of balsamic vinegar. 


Enjoy!
